I have two brothers, Merle and Dawn Bobby, who also love hunting as much as I do. Last month, we decided to go hunting in the countryside of Laredo, to experience the excitement and fun of the night. Laredo is a city in Texas, located on the north bank of the Rio Grande River on the US-Mexico border, opposite Nuevo Laredo in Mexico. It has a long history, rich culture and beautiful scenery, making it an ideal travel destination. We stayed there for three days, visited some interesting places, tasted some delicious food, and of course, most importantly, we enjoyed the joy of hunting at night.
Since it involved night hunting, night vision binoculars were essential equipment. Laredo has experienced many wars and changes, including the Texas Revolution, the Mexican-American War, the American Civil War and the Mexican Revolution. After Texas became independent from Mexico in 1836, Laredo became a no-man’s land until it was assigned to the United States in 1848. From 1839 to 1841, Laredo was also the capital of a short-lived Republic of Rio Grande, which consisted of three Mexican states that tried to break away from the Mexican central government.
Due to Laredo’s special geographical location and historical background, it retains a lot of Spanish and Mexican influences and flavors. There are many interesting places worth visiting here, such as the Republic of the Rio Grande Museum, which was once the capital building of the republic and where seven flags have flown; San Agustin Plaza, which is the oldest plaza in Laredo, surrounded by many historical buildings and churches; San Agustin Cathedral, which is the most important religious center in Laredo, built in 1872, with Gothic and neoclassical styles; Laredo Children’s Museum, which is a place suitable for the whole family to visit, with various interactive exhibits and activities; Laredo Center for the Arts, which is a place to showcase local artists’ works and host various cultural events; Lake Casa Blanca International State Park, which is a place with beautiful natural scenery, where you can enjoy fishing, boating, cycling, picnicking and other leisure activities.
Our main purpose in Laredo, of course, was hunting. We chose a rural area not far from the city, where there are rich wildlife resources, such as deer, foxes, coyotes, wild boars, skunks and so on. We rented a small cabin there as our camp. We set off every night, using wildguarder night vision binoculars to find and track animal traces in the dark.

Taco is a snack that wraps various fillings in a corn tortilla, very popular and convenient. The fillings can be beef, chicken, pork, seafood, beans, cheese, lettuce, sour cream, chili sauce and so on. Taco has many variations and styles, such as Tex-Mex taco, Mexican taco, breakfast taco and so on. We tasted many kinds of tacos in Laredo, each with different flavors and characteristics.
Enchilada is a dish made with corn tortillas rolled up with various fillings, usually topped with chili sauce and cheese and baked in the oven. The fillings of enchilada can be meat, cheese, beans, vegetables and so on. Enchilada has different colors and flavors, such as red enchilada, green enchilada, cream enchilada and so on. We tasted several kinds of enchiladas in Laredo, each of which made us enjoy ourselves.
Tortilla is a thin cake made with corn flour, which can be eaten alone or as an ingredient or wrapper for other dishes. Tortilla has two kinds of soft and hard. Soft tortillas are usually used to wrap tacos or enchiladas and other dishes. Hard tortillas are usually used to make chips or rolls and other snacks. We ate a lot of tortillas in Laredo and found them very crispy and delicious.
Carne asada is a dish made with beef, usually marinated with lemon juice, salt, pepper, garlic and other seasonings and grilled over charcoal. Carne asada can be cut into small pieces and put in tortillas to make tacos, or cut into thin slices and served with onions, peppers, beans and so on. We tasted carne asada in Laredo and found them very tender and juicy, very delicious.
Tamale is a dish made with corn flour and pork, usually wrapped in corn leaves and steamed in a pot. Tamale can have different fillings and flavors, such as chili, cheese, fruit and so on. Tamale can be eaten alone or with chili sauce or other condiments. We tasted tamale in Laredo and found them very soft and sweet, very tempting.
In addition to these dishes, we also tasted some other dishes and snacks, such as cream soup (crema soup), cheese balls (queso balls), fried ice cream (fried ice cream) and so on. Our favorite restaurant was a place called San Tecmo Argentinean Steakhouse, which offers a variety of selected steaks, seafood, salads, desserts and other delicious dishes, as well as quality wines and spirits. We enjoyed a sumptuous and unforgettable dinner there.
The trip to Laredo was a very memorable and meaningful experience that gave us a lot of knowledge and fun. We not only learned about the history, culture and scenery of this city, but also tasted the cuisine and flavor of this city. But what excited and thrilled us the most was our night hunting experience. We were able to get close to nature and animals in the dark and feel a primitive and exciting pleasure.
